Smothered Cabbage

It doesn't get any more southern than this.  It's great.

large head of cabbage cut into 1" pieces
1
medium onion cut into ½" pieces
4 tbl
butter
1½ cups
 ham stock (I use Better Than Bouillon Ham Stock)
½ tsp
salt
½ tsp
black pepper

Cut the cabbage and onion up.  Turn the heat to medium in a large pot or Dutch oven with a lid and melt the butter.  Add the onion and saute' the onion for 4 or 5 minutes or until they turn clear.  Add the cabbage, stock, salt, and pepper and put the lid on the pot.  Let this simmer for 20 minutes and no more.  It will finish cooking in the next step.  Stir the cabbage every few minutes as it simmers.   Now take the lid off the pot and continue cooking for another 10 to 15 minutes until most of the stock has evaporated.  Serve.
