Grilled Broccoli

This works best with whole broccoli stalks. Broccoli crowns with no stems fall apart.

Wash the broccoli then use a vegetable peeler to trim the outside skin off the broccoli stalks. Heat a pot of water with enough water to cover the broccoli to boiling. While the water is heating, get a bowl of ice water together large enough to submerge the broccoli. Blanch the broccoli in the boiling water for 3 minutes. No more. Transfer the broccoli to the ice water to stop it from cooking then drain. Pour a tsp or so of olive oil over each crown, sprinkle the cheese over them, and season with salt and pepper. Heat the grill for indirect grilling and put the broccoli, cut side down, on the grill for 10 minutes. Serve.
