Ham & Pasta Casserole

What do you do with leftover ham after that big dinner?  You can make omelets, sandwiches, hash, etc. However, if you have the equipment, this makes a big meal that is easy and really good. Recently we bought Instant Pot® and we've been wondering what to do with it.  Here is something we came up with that uses leftover ham.  It's very easy and to make, and one of my favorite one pot meals.

1 tbl olive oil
3 to 4 cups cooked, leftover ham, cut into ½" pieces
1 lb penne pasta or other pasta of your choosing
1 medium onion, diced
1½ tsp granulated garlic
½ tsp dried parsley
½ tsp dried basil
¼ tsp dried oregano
¼ tsp black pepper
1 cup frozen peas, thawed
3 cups pork or chicken broth
2 cups milk (skim, 2%, whole, it doesn't matter)
¼ cup flour

Parmesan cheese, grated

Add the olive oil to the Instant Pot® and turn it to saute'.  Let it heat up, then add the ham and onions.  Cook this until the ham and onions release their water and it evaporates.Add the garlic, parsley, basil, oregano, and pepper and cook for one more minute.  Add everything else except the Parmesan cheese to the Instant Pot® and stir well. Put the lid on the pot, turn the vent to sealing, and set the timer to 8 minutes.  When it's done cooking let it sit for 5 minutes then open the vent and let the pressure out.  Open the pot, dish the casserole out, and sprinkle some Parmesan cheese over the top.  Serve.
