Key Lime Pie

Key lime pie is so easy to make and so good and nobody makes a better key lime pie than Kermit in Key West.  Our recipe is his his recipe but with an animal cracker pie crust.  Here's his website.

Pie Crust
5 oz
(by weight) animal crackers
3 tbl
4 tbl
melted butter



lime juice, fresh is best, Nelly & Joe's is a great second best and we can get it locally, Kermit has his own here. Kermit's key lime juice

2  cans

sweetened condensed milk (14 or 14 oz cans)


egg yolks

First make the pie crust.  Put the animal crackers and sugar in a food processor and process for approximately 30 seconds or until smooth.  Add the butter and pulse 8 times or until well combined, Dump the cracker mixture into a 9" or 9.5" pie plate and tamp it down on the bottom and sides with a measuring cup, forming a pie crust.  Bake uncovered at 325 for 13 minutes.  Take the pie crust out and let it cool to room temp.

Now turn your mixer to one or two steps above the slowest setting.  Mix the lime juice and condensed milk for 1 minute. Add the eggs yolks, mix for 1 more minute, and pour everything into the pie crust.  This makes a normal key lime pie.

If you want a fluffier pie follow the directions above but after mixing the lime juice and condensed milk, turn the mixer up to as fast it will go without making a mess, then add the egg yolks and let the mixer whip everything for 3 minutes.  Now pour this into the pie crust.

Now bake, uncovered, in a 325 oven for 15 minutes.  Let the pie cool for 30 minutes then refrigerate for at least two hours. Top with whipped cream.
