Key Lime Pie

Key lime pie is so good and it is one of the easiest deserts you can make.  Our recipe is a normal key lime pie, but with an animal cracker pie crust.  If you want, you can just use a store bought graham cracker crust.

5 oz
(by weight) animal crackers
3 tbl
sugar
4 tbl
melted butter

lime juice, fresh is best, Nelly & Joe's is a great second best and we can get it locally.

sweetened condensed milk (14 or 14½ oz cans)

First make the pie crust.  Put the animal crackers and sugar in a food processor and process for approximately 30 seconds or until smooth.  Add the butter and pulse 8 times or until well combined, Dump the cracker mixture into a 9" or 9.5" pie plate and tamp it down on the bottom and sides with a measuring cup, forming a pie crust.  Bake uncovered at 325° for 13 minutes.  Take the pie crust out and let it cool to room temp.

Now turn your mixer to one or two steps above the slowest setting.  Mix the lime juice and condensed milk for 1 minute. Add the eggs yolks, mix for 1 more minute, and pour everything into the pie crust.

Bake, uncovered, in a 325° oven for 15 minutes.  Let the pie cool for 30 minutes then refrigerate for at least two hours. Top with whipped cream.
