Asian Meatloaf

This is our favorite recipe for meatloaf.  It's easy, it's delicious,  and it's different from normal meatloaf. 

½ Lb

ground pork

2 Lb

ground beef

3 tbl

soy sauce

2

eggs,beaten

3 slices

white bread
1 onion, diced
1 stalk
celery, finely diced
1 tbl
fresh ginger, grated
2 tbl
ketchup
½ cup
hoisin sauce
2 tbl hoisin sauce


Preheat the oven to 350°.  In a large mixing bowl, mix the pork, beef, bread, onion, celery, eggs, soy sauce, ginger, and the 2 tbl of hoisin sauce together.  Just do it with your hands.  Make sure everything is well distributed.  Form the loaf into an oval, prepare a greased baking pan, and place the meatloaf in the pan.  Bake, uncovered, for 40 minutes.  While the meatloaf is baking, mix the ketchup and ½ cup of hoisin sauce together.  Take the meatloaf out and drain any grease from the pan.  Pour the ketchup/hoisin sauce mixture over the top of the meatloaf.  Bake the meatloaf for another 20 minutes.  Pull the meatloaf from the oven and let it sit for ten minutes.  Serve.
