Crab Boiled Peanuts

Boiled peanuts are a southern tradition that northerners don't seem to appreciate.  Regular boiled peanuts are great but add some crab boil and they are better.  In the past I've always boiled peanuts on the stove.  It takes 4 to 5 hours, you have to watch the pot, add water, adjust the temp, etc.  Recently we bought an Instant Pot pressure cooker and all of a sudden boiling peanuts is so much easier and faster.  Raw green peanuts are better as dried peanuts in a bag can be mealy when you boil them.

Zatarain's® liquid crab boil (total)

Put the peanuts in the Instant Pot.  Dissolve the salt in the water and stir in the crab boil.  Set the Instant Pot to cook at high pressure for 4½ hours.  Let the Instant Pot do its job, then let it cool down without letting the pressure out manually.  When the pressure releases, open the Instant Pot and stir the peanuts, trying to move the peanuts that are on the top to submerged and on the bottom.  Let the peanuts cool to room temperature.  The peanuts, especially the ones that were on top, will absorb some of the water.  Pour the peanuts into a colander so that they can drain.  Serve.
