Breakfast Tostadas

These only have 6 ingredients, are fast, easy, and very good. The avocado and everything bagel seasoning make a simple breakfast a little bit special. This recipe makes two tostadas.

⅓ lb Bulk breakfast sausage, whatever brand is your favorite

10” flour tortillas

eggs
˝ cup  
shredded melty cheese, whatever is your favorite
1 avocado, pitted, skinned, and sliced into Ľ” slivers

everything bagel seasoning

Cut the sausage into half around the waist then cut the half into thirds. Take one of the thirds and using a butter knife, spread it on a tortilla in a thin layer as evenly as you can while staying about ˝” from the edge. Repeat with the other tortilla and set these aside.

 

Scramble the two eggs, add them to a non-stick pan and cook until done. Set these aside on a plate and loosely cover with aluminum foil to keep them warm.

 

Wipe the pan out, turn the heat to medium, and put the first sausage tortilla in the pan, sausage side down. Let this cook until the sausage browns as much as you'd like.

 

Now take the tortilla out and flip it over on to a plate. Top with half the scrambled egg, then the cheese, then the avocado, and sprinkle as much or as little bagel seasoning on as you’d like. Repeat the cooking and assembly with the second tortilla. Fold the tostadas in half and serve.
