Caramelized Spam & Pasta

Brown Sugar Caramelized Spam® & Pasta

Is this gourmet food?  Absolutely not, but it is MUCH better than it sounds.  It's a tasty, easy dinner that comes together very quickly.  The key to making this recipe is cutting the spam into very small pieces so they will caramelize.  We slice the Spam® into ¼" thick slices and then into ¼" cubes.

12 oz can
Spam® (your choice of style or flavor)
1 tbl
butter
1 tbl + 1 tsp
brown sugar (dark or light, it doesn't matter)
1 tsp
sesame oil
8
green onions, divided, just the green parts, sliced into ¼" pieces

salt

pepper
1 lb
pasta of your choosing (we use bowtie, pipe rigate, or rotelle)

Dice the Spam®.  Slice 6 of the green onions and put them in a pile.  Slice the other 2 green onions and put them in a second pile.  Start a pot of water for the pasta and when it comes to a boil, cook it according to the package directions.  While the water heats, put the butter in a deep non-stick frying pan and turn the heat to medium high.    As soon as the butter melts add the Spam®, brown sugar, sesame oil, and the six green onion pile to the pan.  Season to taste with salt and pepper and saute' until the Spam® browns or caramelizes around the edges.  The pasta should be cooked about now.  Drain it and add it to the Spam® mixture.  Stir well and serve topped with remaining two green onions.
