Sometimes it seems that I'm the only person
in the world that likes Brussels sprouts. This recipe may
make you like them too.
1½ Lbs
Brussels sprouts with the stems trimmed and cut
in half
3
slices bacon
1
shallot, finely chopped
1 cup
chicken broth
1 Tbl
olive oil
salt & pepper
Add the olive oil and bacon to a frying pan and
place over medium heat. Cook the bacon until
crisp. Remove the bacon, place it on a paper towel,
and break it into bits. Save the pan drippings. Add
the shallots to the pan and cook until clear. Add the
Brussels sprouts and cook for 3 minutes. Add the chicken
stock, turn the heat up to high, and bring the stock to a
boil. Season with salt and pepper and stir until the stock
has evaporated. Pour everything in a bowl and top with the
bacon bits. Serve.
