Buttered Noodles
This is so simple, so good, and it only uses four ingredients. The picture above is incorrect. I will change it the next time we make this.
| 1 lb |
egg
noodles |
| 1 stick | butter |
| 1 cup | freshly grated parmesan cheese |
| 2 tbl | finely chopped fresh parsley |
| salt & pepper to taste (white pepper looks
better in this dish as it dowsn;t leave black specks) |
Fill a pot
with salted water, bring it to a boil, add the egg noodles,
bring the water back to a boil, and boil the noodles for 5
minutes. Reserve 1 cup of the cooking water then drain the
noodles.
While the noodles drain, return the pot to the stove, turn the heat to medium low, and add the butter and half of the pasta water. Stir while the butter melts.
Add the cooked noodles, parmesan cheese and parsley to the pot and stir well. If the noodles are dry add a little of the reserved pasta water. Taste the noodles and add salt and pepper as needed.
Serve.
