Dirty Rice

Dirty Rice With Shrimp

Dirty Rice is Cajun but this dish is not like Cajun dirty rice.  Normal dirty rice is made with liver.  I don't care for liver so there isn't any in this recipe.  Because of that, I have saved this recipe in the Seafood Recipe section.

1 Lb
ground pork or Italian sausage
1½ cups
onion, diced
2 sticks
celery, diced
2 tsp
granulated garlic
½ tsp
cayenne pepper
2 tsp
paprika
2 tsp
dried oregano
4
bay leaves
1¾ tsp
salt
¼ tsp
black pepper
1½ cups
converted rice
2½ cups
chicken broth
2 lbs
shrimp, peeled
2
green onions, chopped (the entire onion)

Heat a large nonstick pot with a cover over medium heat.  Add the pork or sausage and cook until it is no longer pink, breaking it up as you cook it.   Reduce the heat to medium low and add the onion and celery and cook for 5 minutes.  Add the rice, all of the spices, stir well, and cook for 1 more minute.  Add the chicken broth, bring to a boil, reduce to a simmer, cover, and cook for 15 minutes or until there is just a little bit of stock bubbling up through the rice.  Add the shrimp and cook for 2 more minutes.  Remove from the heat and let sit for five to ten minutes until all the stock is absorbed.  Remove the bay leaves and add the green onions.  Serve.
