This works best with whole broccoli stalks.
Broccoli crowns with no stems fall apart.
Wash the broccoli then use a vegetable peeler to trim the outside
skin off the stalk portion but leave the head alone. Heat a
pot of water with enough water to cover the broccoli to boiling.
While the water is heating, get a bowl of ice water together large
enough to submerge the broccoli. Blanch the broccoli in the
boiling water for 4½ minutes. No more. Transfer the broccoli to
the ice water to stop it from cooking then drain and cut the
broccoli stalks in half long ways. Pour a tsp or
so of olive oil over each crown, sprinkle the cheese over them,
and season with salt and pepper. Heat the grill for indirect
grilling and put the broccoli, cut side down, on the grill for 5
to 7 minutes then move the broccoli stalks over the fire for
direct cooking. Cook for one to two minutes or just long enough to
get some grill marks on the broccoli. Serve.
