Ham & Cheese
Potato Croquettes
These
are easy, delicious, and a great way to use leftovers.
Leftover ham works well, but sausage, shrimp, and many other
proteins, will do. Use whatever kind of cheese you
like. Sharp or mild cheddar cheese, Swiss, Monterey
Jack, Colby, Romano, etc.

leftover mashed potatoes |

leftover ham, diced |

cheese,
shredded |

green onions, just the green parts, thinly sliced |

granulated garlic |
¼ cup | AP
flour plus a bit more for your hands |
¼ cup | canola oil |
Add the mashed potatoes, ham, cheese, egg, garlic powder, green onions, and flour to a large bowl. Stir together until combined.
Lightly flour your hands and divide the potato mixture into 4 flat disks, about inch thick.
Heat the oil in a large non-stick skillet. Fry the croquettes in batches, flipping once, about 5 or 6 minutes per side until golden brown and delicious. Transfer to a paper towel lined plate.
Let the croquettes
cool for 5 minutes before serving.
