These have just the right amount of heat. Some, but not too much. We use Tabasco Sriracha Sauce but the brand with the rooster works just as well.
1 dozen | chicken wings (2 dozen pieces) |
3 tbl | melted butter |
2 tbl | sesame oil |
2½ tsp | granulated garlic |
1 tsp | kosher salt |
¾ tsp | freshly ground black pepper |
Sauce | |
4 tbl | melted butter |
1 tsp | freshly grated ginger |
⅓ cup | honey |
⅓ cup | Tabasco Sriracha Sauce |
1 tbl | soy sauce |
1 tbl | lime juice |
1 tbl | rice wine vinegar |
2 tsp | cornstarch |
2 tsp | water |
sesame seeds | |
cilantro leaves |
Preheat your oven to 400° and line a baking pan with parchment paper.
Cut the wings into drumettes and flappers, dry them off with paper towels, and put them in a large bowl. Mix the 3 tbl of melted butter, sesame oil, granulated garlic, salt, and black pepper together and pour everything over the wings. Mix until the wings are completely covered.
Spread the wings in a single layer in the lined baking pan. Bake for 25 minutes, turn the wings over, and bake for another 25 minutes.
When you flip the wings, start on the sauce. Melt the butter in a small sauce pan, add the ginger, honey, sriracha sauce, soy sauce, lime juice, and vinegar. Bring this to a simmer. While the sauce is heating, make a slurry by mixing the cornstarch and water together in a small bowl. When the sauce comes to a simmer, add the cornstarch slurry, stir until it thickens, then take the sauce off the heat.
When the wings have baked for the entire 50 minutes, take them out and turn your oven to broil. Put the wings in a large mixing bowl, pour the sauce over the wings, and mix well.
Take the old parchment paper out of the baking pan, wipe out any grease, and replace the old parchment paper with new parchment paper. Put the wings back on the baking pan in a single layer. Put the wings in the oven and broil for 3 to 4 minutes checking frequently. You have to check frequently as the honey will burn quickly and eventually the parchment paper will burn.
Put the wings on a serving platter, sprinkle sesame seeds and cilantro on them and serve.
