Taco Casserole

Taco Casserole

This is a simple, easy, fast, filling recipe.  It's not fancy but it's good.

For 4 to 6 People
2 lbs ground beef
1 medium
onion, diced
4 oz can diced green chilies
¾ cup water
3 packets taco seasoning
2 cups
frozen corn
15 oz bag
nacho cheese Doritos
8 oz by weight
mozzarella cheese, shredded
8 oz by weight
cheddar cheese, shredded

shredded lettuce

diced fresh tomatoes

For 2 or 3 People
1 lb ground beef
½ of a medium onion, diced
½ of a 4 oz can diced green chilies
½ cup
water
1½ packets
taco seasoning
1 cup
frozen corn
9 oz bag
nacho cheese Doritos
4 oz by weight
mozzarella cheese, shredded
4 oz by weight cheddar cheese, shredded

shredded lettuce

diced fresh tomatoes

Preheat your oven to 375°.

 


Add the ground beef and onions to a non-stick frying pan and cook until the beef is browned and the onions are translucent.  Drain the fat from it.  Add the diced chilies, water, taco seasoning, and frozen corn to the meat mixture and cook until most of the water has evaporated.  (Leaving the meat mixture a little wet makes the casserole moister.)  Set the pan aside to cool.

While the meat cools, break the Doritos into small pieces.  Make the Dorito pieces as small as possible without turning them into a powder.  (Bigger pieces look better, but make the casserole difficult to slice.)
 
For 4 to 6 people use a 9” x 13” glass baking dish and for 2 or 3 people use an 8” x 8” glass baking dish.  Spray the baking dish with non-stick cooking spray then spread half of the broken Doritos on the bottom of the pan.  Spoon half of the meat evenly over the top of the Doritos.  Spread half of the mozzarella cheese on the meat and then half of the cheddar cheese.  Repeat this so that you have two layers of Doritos, meat, and cheese.  Bake, uncovered, for 20 to 25 minutes.

 

Take the casserole out and let it cool for 15 minutes.  Cut into serving size pieces.  Put a slice of the casserole on a plate, top with the shredded lettuce and diced tomatoes, and pour as much or as little taco sauce over the lettuce and tomatoes as you’d like. Serve.
